Stuffed baked apples with a vegan salted caramel sauce

 

Not only are these apples stuffed with our delicious oats, but they're stuffed full of goodness! Give these delicious winter warmers a try for yourself.


4 large cooking apples 

3/4 cup of apple and cinnamon porridge 

1 heaped tablespoon of coconut oil, melted 

 2 tsp of Sweet Freedom Golden Syrup

30g of pecans, chopped 


Vegan salted caramel sauce:

4 Dates 

Pinch of salt 

2 tbsp of smooth almond or cashew butter 

4 tbsp of oat milk 

Desert spoon of coconut sugar 


Method:

Pre heat the oven to 160C 

Mix the porridge, honey, coconut oil and pecans in a bowl 

Then, Core apples with an apple corer and place them on a baking tray 

Fill the holes with the oaty mixture, any extra can go on the baking tray 

Bake for 12-14 mins (depending on how hot your oven gets, keep an eye on them to ensure they don’t collapse!) 

Take out, drizzle with the salted caramel sauce and tuck in (goes amazingly with vanilla ice cream)
