We all know the humble crumble is a Great British favourite. It’s the perfect way to round off any meal, so we’ve created these adorable, mini crumbles using our porridge as a fantastic, crunchy, oaty topping. They are perfect for tucking into in front of a bonfire, for pudding or even for breakfast! Plus, they are refined sugar free and super easy to make. Give them a whirl!
Ingredients (serves 4)
2 large cooking apples, chopped into small cubes
2 tsp of ground cinnamon
1 tsp of nutmeg
2 tbsp of honey (or maple)
Juice and zest of half an orange
2 tbsp of raisins (optional)
Topping:
100g of porridge (we used Strawberry and Peanut butter)
2 tbsp of sugar
3 tbsp of coconut oil (around 50ml when melted)
Method:
Heat the oven to 160C
Add chopped apple to a large pan, followed by nutmeg, cinnamon, orange juice and zest, honey and stir to combine
Stew on a low heat for around 15 mins, stirring occasionally
Stir raisins (if using) into the mix in the last few mins
When the apple is cooked and softened, turn off the heat and set aside
Meanwhile, pour oats and sugar into a bowl and stir
Pour in the coconut oil and continue to stir until combined
Spoon the apple mixture evenly into 6, small ramekin dishes then spoon the oaty mixture on top, ensuring it covers the tops of each one evenly
Pop into the oven for 25-30 mins (until the tops are slightly browned – not burned!)
Serve with a dollop of custard or ice cream and enjoy!
