Looking for the perfect sweet treat to crush your winter cravings? These blondies use our limited edition Apple & Cinnamon oats, but you can substitute for our other flavours to try a range of different baked blondie delights!
Ingredients:
1 large apple, chopped into small pieces
1 heaped tsp of cinnamon
1 tbsp of honey or maple
260g of A/C porridge, blended in blender
3 tbsp of coconut sugar
2 tbsp of peanut butter
1 egg
100g butter (we used vegan)
1 tsp of vanilla extract
Caramel sauce:
4 tbsp of oat milk
2 heaped tsp of almond butter
6 medjool dates (pitted and soaked in boiling water for 5 mins)
Method:
Pre-heat oven to 170C
Add apple, cinnamon and honey/maple to a mix and mix to combine
Set aside then in a separate bowl mix together butter, peanut butter, egg, vanilla extract and coconut sugar
Add the blended porridge and the apple mix and stir to combine
Pour mixture into a small baking tray lined with baking parchment and use a spatula to ensure it's evenly spread and flat on top
Pop into the oven for 25 mins
Meanwhile make the sauce by simply blending all the ingredients together until smooth
When the blondies are ready drizzle the sauce on top
Leave to cool (important!) then cut into squares and tuck in!
